ITALIAN STYLE SCRAMBLED EGG
Soft, creamy scrambled eggs combined with a selection of Italian-style vegetables and Parmesan cheese
INGREDIENTS
4 eggs
2 tablespoons milk
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper
½ onion—finely chopped
¼ red pepper – finally diced
½ zucchini (courgette)—finely chopped
1 tablespoon extra virgin olive oil
2 tablespoons grated Parmesan cheese
4 slices of lightly buttered whole grain toast
METHOD
WHISK the eggs, milk, salt and pepper together gently. HEAT the olive oil in a pan over a medium heat until lightly sizzling. ADD the onion, red pepper and zucchini and sauté for 8 minutes, stirring occasionally. REDUCE the heat to medium-low then add the egg mixture and stir continuously for about 2 minutes, or until the eggs are barely set. STIR in the Parmesan cheese and cook for a further 30 seconds or until the eggs are creamy. REMOVE from the heat and serve with slices of lightly buttered whole grain toast.

ITALIAN PASTA BAKE
(Serves 4-6)
Ingredients
14oz pasta penne
Salt and pepper
10oz ham, cut into strips
Butter for greasing
3 eggs
¾ pint single cream
6oz grated cheese
2oz grated parmesan cheese
Method
1). Preheat oven to 190 C/ 375 F/ Gas 5.
2). Put pasta in a pan of boiling water and cook until just tender. Drain well.
3).Stir the ham strips into the pasta and put in a greased ovenproof dish.
4).Beat together the eggs, cream and seasoning, and add half the grated cheese. Pour over the pasta.
5). Sprinkle the remaining grated cheese and the Parmesan over the top and bake for about 40 minutes, until golden.
As an alternative to ham, use crisply fried bacon, salami, or even good old sausages, cooked and thinly sliced.
