LOW FAT GARLIC MUSHROOMS
Take a large square of tin foil, spray with a light cooking spray, add some sliced mushrooms, a clove of crushed garlic, freshly milled salt and pepper and wrap up in a parcel. Cook the the parcel on the BBQ for about 15-20 minutes. Serve with French bread lightly toasted on the BBQ.

MONKFISH KEBABS

LIME MARINATED CHICKEN
“4 chicken breasts, 2 tablespoons clear honey, 1.5 tablespoons soy sauce, juice & zest of one lime, 2 cloves of garlic. Mix up all marinade ingredients, stir in chicken, leave overnight then BBQ! Can either leave chicken whole or chop into chunks and cook on skewers

CHICKEN KEBAB ( OR VEGGIE TOFO )
Cubed Chicken ( or Tofo ) on a skewer with anything you like including cherry tomatoes, mushrooms, onion, peppers, courgette or aubergine (cut into ¼ inch cubes), pineapple chunks, apple slices… whatever takes your fancy! Simply put your chosen combination onto skewers, brush with a little olive oil, or find a reduced calorie marinade, and grill over the BBQ until the meat is cooked and tender and the vegetables are roasted and charred around the edges.

CALIFORNIAN FUSION PEACH SALSA
“This is a fusion Peach salsa that combines hot and sweet with Asian spices. Great as a dip with tortilla chips or served as a garnish to meat dishes.”
Ingredients
2 (15 ounce) cans peaches, drained and chopped
2 green onions with tops, thinly sliced
2 teaspoons chopped fresh cilantro
2 tablespoons lime juice
1/4 teaspoon Asian five-spice powder
2 teaspoons garlic chili paste
1/8 teaspoon white pepper
Directions
In a medium bowl, combine peaches, green onion, cilantro, and lime juice. Mix in five-spice powder, garlic chili paste, and white pepper. Cover, and refrigerate until ready to serve.

GREEK BIFTEKI
Ingredients
1 1/3 pounds ground beef
1 tablespoon plain yogurt
2 teaspoons dried thyme
salt and pepper to taste
4 ounces feta cheese
1. Preheat grill for indirect heat.
2. In a large bowl, mix together ground beef, yogurt, thyme, and salt and pepper. Form meat into 8 patties, about 2 to 3 inches in diameter.
3. Cut the cheese into 4 slices. Place one cheese slice between two patties, and seal the edges. Repeat with remaining beef patties and cheese slices. Set bifteki aside.
4. Brush grate with oil, and arrange bifteki on hot grate. Cover, and cook for 15 to 20 minutes, or until meat is cooked through and cheese is melted.

CAJUN GRILLED CORN
A delicious and easy way to prepare your corn cobs they taste like candy and can go with any barbeque meal.
Ingredients
6 ears corn, husked and cleaned
1/2 cup butter, softened
6 tablespoons Cajun seasoning
Directions
1. Peel back husks form the corn, remove strings and leave just a few layers of husk on the corn.
2. Spread butter or margarine over each ear of corn. Sprinkle Cajun seasoning lightly over each ear, or to taste. Fold corn husks back over the corn. Wrap in foil.
3. Place on grill for 25 minutes, turning occasionally. Unwrap foil, peel back husks and enjoy.

TEX-MEX BURGER WITH CAJUN MAYO
* 1/2 cup mayonnaise
* 1 teaspoon Cajun seasoning
* 1 1/3 pounds ground beef sirloin
* 1 jalapeno pepper, seeded and chopped
* 1/2 cup diced white onion
* 1 clove garlic, minced
* 1 tablespoon Cajun seasoning
* 1 teaspoon Worcestershire sauce
* 4 slices pepperjack cheese
* 4 hamburger buns, split
* 4 leaves lettuce
* 4 slices tomato
Directions
1. Preheat grill for medium-high heat. In a small bowl, mix together the mayonnaise and 1 teaspoon of Cajun seasoning. Set aside.
2. In a large bowl, mix together the ground sirloin, jalapeno pepper, onion, garlic, 1 tablespoon Cajun seasoning, and Worcestershire sauce using your hands. Divide into 4 balls, and flatten into patties.
3. Lightly oil the grilling surface, and place the patties on the grill. Cook for about 5 minutes per side, or until well done. During the last 2 minutes, lay a slice of cheese on top of each patty. Spread the seasoned mayonnaise onto the insides of the buns. Put burgers in the buns, and top with lettuce and tomato to serve.
